
The Grilled Cheese Burrito: My Financial Breakthrough

Ingredients:
- 1 lb ground beef or chicken
- 1 packet taco seasoning
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup nacho cheese sauce
- 1/2 cup sour cream
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 6 large flour tortillas
- 2 tablespoons butter
Instructions:
Cook the Meat:
- In a skillet over medium heat, cook the ground beef or chicken until fully cooked. Drain excess fat.
- Add the taco seasoning and follow the package instructions. Simmer for a few minutes until well combined.
Prepare the Filling:
- In a large bowl, combine the cooked rice, cooked meat, 1/2 cup of cheddar cheese, 1/2 cup of Monterey Jack cheese, nacho cheese sauce, sour cream, diced tomatoes, red onion, and cilantro. Mix well.
Assemble the Burritos:
- Lay out a tortilla and add a generous amount of the filling in the center.
- Roll the tortilla tightly, tucking in the sides as you go. Repeat with remaining tortillas and filling.
Grill the Burritos:
- Heat a large skillet over medium heat. Melt a small amount of butter in the skillet.
- Place the burrito seam-side down in the skillet. Sprinkle some of the remaining shredded cheeses on top of the burrito.
- Cook until the cheese is melted and forms a crispy crust, about 2-3 minutes. Flip carefully and repeat on the other side.
Serve:
- Remove from the skillet and let cool slightly. Serve with additional sour cream, salsa, or guacamole if desired.
