​Classic Greek Salad

​Ingredients:

  • 3 cups cherry tomatoes, halved or 2 large tomatoes, chopped
  • 1 cucumber, peeled and sliced into half-moons
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled or in large chunks
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil, chopped (optional for garnish)

Instructions:

  1. Prepare the Vegetables:
    • In a large bowl, combine the cherry tomatoes, cucumber, red onion, and Kalamata olives.
  2. Add Feta Cheese:
    • Gently mix in the feta cheese.
  3. Make the Dressing:
    • In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  4. Toss the Salad:
    • Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. Garnish and Serve:
    • Garnish with fresh parsley or basil if desired.
    • Serve immediately or chill in the refrigerator for about 30 minutes to let the flavors meld.

Tips:

  • Tomatoes: Use ripe, juicy tomatoes for the best flavor.
  • Feta Cheese: For a more authentic taste, use Greek feta cheese made from sheep’s milk or a combination of sheep and goat’s milk.
  • Olives: Kalamata olives are traditional, but you can use other types of olives if preferred.
  • Variations: Add sliced bell peppers, capers, or red pepper flakes for additional flavor.
