Christmas Reindeer Cupcakes

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/3 cup cocoa powder
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract

For Decoration:

  • Pretzels for antlers
  • Red and brown M&Ms for noses
  • Candy eyes

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fill and Bake: Fill each cupcake liner two-thirds full with batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  6. Prepare Frosting: In a mixing bowl, beat the butter until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the heavy cream. Beat until smooth. Stir in vanilla extract.
  7. Frost Cupcakes: Once the cupcakes are cooled, frost them using a piping bag or a spatula.
  8. Decorate: Place two pretzels at the top for antlers, add candy eyes, and use an M&M for the nose (red for Rudolph, brown for other reindeer).
  9. Serve: Enjoy your festive Christmas Reindeer Cupcakes with family and friends!
